Fresh Italian truffles: varieties, seasons and uses
A fresh truffle is a unique natural product. Beneath the ground, in symbiosis with the roots of certain trees, truffles develop their characteristic aroma and flavour. Italy is home to various types of edible truffles, each with its own harvesting season, aroma and culinary use.
At Kelvini, you can find information about the main types of Italian truffles and, depending on the season, enquire about current availability.
Which fresh truffle will you choose?
Tartufo estivo – Tuber aestivum
Tartufo autunnale – Tuber uncinatum
Il tartufo autunnale è apprezzato per il suo spiccato aroma di bosco. È una scelta ideale per primi piatti cremosi, risotti, funghi e preparazioni a base di burro. È disponibile soprattutto in autunno.
Tartufo nero invernale – Tuber melanosporum
This exclusive black truffle has a deep and complex aroma. It is often paired with refined pasta dishes, risotto, eggs, potatoes and dishes made with butter. It is mainly in season during the winter.
Black winter truffle – Tuber brumale
Tuber brumale is a different type of black winter truffle to Tuber melanosporum. It has its own, often strong aroma and therefore deserves a separate mention. The two varieties must not be presented as the same product.
Tartufo bianco – Tuber magnatum Pico
Availability depends on the type of truffle, the region, the weather and harvesting conditions. A truffle that is available in summer may not be available in winter.
That is why, when it comes to fresh truffles, we provide up-to-date availability and prices on request. This allows you to enquire about the variety that best suits your dish and budget at that particular time.
How do you use fresh truffles?
Fresh truffles are at their best in dishes with relatively few ingredients. Their flavour does not need to compete with strong herbs or rich sauces.
Some classic combinations are:
Tagliolini with truffle: fresh pasta, butter and thinly shaved truffle.
Truffle risotto: a creamy risotto, finished with fresh truffle.
Eggs with truffle: scrambled eggs or an omelette with a subtle truffle flavour.
Mashed potato with truffle: a simple, creamy base that lets the truffle take centre stage.
Truffle crostini: toasted bread with butter and fresh truffle.
The method of preparation varies depending on the type. White truffles, in particular, are usually added right at the end, so that their delicate aroma is preserved.
How do you store fresh truffles?
Fresh truffles are delicate and gradually lose their aroma after harvesting. Store them in a cool place in accordance with the supplier’s specific instructions, in suitable packaging with absorbent paper that is replaced regularly.
Fresh truffles should ideally be used as soon as possible. The exact shelf life depends on the variety, how fresh they are on receipt and the storage conditions.
The Secret of Nonna Kelvini
Let the truffle speak for itself. A plate of fresh tagliolini with a little good-quality butter and thinly shaved truffle often needs nothing more. Opt for a simple preparation and add the truffle at just the right moment.
Frequently asked questions about fresh truffles
Can I buy fresh truffles all year round?
Not every variety is available all year round. Different types of truffle have different harvesting seasons. Please therefore enquire about the current selection.
What is the difference between white and black truffles?
White and black truffles differ in botanical species, aroma, flavour, season and preparation. The white Tuber magnatum is usually shaved raw over hot dishes. Some black truffles are also suitable for use in hot dishes.
Why does the price of fresh truffles vary?
The price is influenced by the variety, quality, size, harvest, availability and market demand. Rare varieties in particular can be subject to significant price fluctuations.
How much fresh truffle do I need?
That depends on the type of truffle, the dish and the desired intensity of flavour. When placing your order, please feel free to ask for a suitable amount per person.
