Ziti Tagliati – Artisanal Pasta (500g)

(0 review)

Ziti Tagliati (sliced ziti) is an iconic classic from the Southern Italian culinary tradition, particularly in Campania and Naples. Originally, the long, smooth ziti tubes were broken by hand for festive family occasions such as weddings – from which the name ziti ('betrothed') derives. This pre-cut variant combines tradition with convenience. Thanks to the sturdy walls and generous hollow interior, Ziti Tagliati is the undisputed star in authentic Neapolitan ragù and rich, golden-brown baked dishes (ziti al forno).

Ziti Tagliati: The Festive Heart of Neapolitan Cuisine

In Campania and surrounding areas, Ziti Tagliati is synonymous with traditional Sunday lunches and festive meals. The hollow tubes soak up rich, stewed sauces and retain their firm structure, even when prepared in the oven. Thanks to the pressing through artisanal bronze molds and a slow drying process at low temperatures, this pasta retains its high protein content, pronounced grain flavour and perfect al dente bite.

Traditional Combinations

  • Classic: The ultimate pasta for authentic Neapolitan ragù (slow-cooked beef or pork) and casseroles (ziti al forno) with gratinated mozzarella, ricotta and meatballs.

  • Alternative: Rich sauces based on aubergine, tomato and smoked provola cheese, or creamy mushroom sauces.
