The Story: At Kelvini, Italian Artisan, we’re always on the lookout for products that tell a story that goes beyond simply being ‘delicious’. Forest honey is one such product. It is not made from flower nectar, but from the ‘honeydew’ that insects leave behind on the leaves of trees. The result is a rare, almost black honey with a complex flavour reminiscent of resin, malt and dried figs.

Agricola Sandoro harvests this honey in unspoilt forests where the bees are given the time to produce a top-quality product. Because forest honey naturally contains far less sugar and has a high mineral content, it is a favourite with chefs and food connoisseurs. It is a powerful ingredient that not only comes into its own on a slice of bread, but really shines when paired with savoury flavours.

The Kelvini Tip: This honey is too intense for tea. Use it like a chef: drizzle a little Melata di Bosco over a mature Pecorino or a blue-veined cheese (such as Gorgonzola).
