The base consists of 100% superior-quality wholemeal durum wheat, grown entirely under our own management on the sun-drenched family-owned fields in the hills of Campania (Km 0) and kneaded with pure spring water. As we are committed to a purely natural cultivation method and the grain undergoes no chemical treatment whatsoever, the pasta is guaranteed to be 100% free from glyphosate and pesticides. This results in a pure, natural product with a high natural fibre content and a pure, deep wheat flavour. Thanks to the authentic extrusion through bronze dies (trafilata al bronzo) and an extremely patient, slow drying process at a low temperature, the pasta retains its characteristic rough texture. This ensures optimal sauce absorption and a deliciously firm al dente bite after a cooking time of 11 minutes.
