The Cantabrian Sea off the north coast of Spain is regarded worldwide as the most renowned fishing ground for anchovies. The cold, oxygen-rich waters and abundance of plankton ensure that the anchovies are larger, meatier and more flavourful than almost any other European species.

Rizzoli selects only the finest specimens, which are processed by hand at the landing site immediately after being caught. They are then left to mature for a long time in temperature-controlled vats until their flavour has fully developed.
