Bucatini (derived from the Italian word ‘buco’, meaning ‘hole’) is one of the most characteristic long pasta shapes from central and southern Italy.
At first glance, it looks like thick spaghetti, but the secret lies inside: a narrow, hollow channel runs along its entire length. This ingenious design creates a unique sensory experience. During cooking, the water flows through the centre, ensuring the pasta cooks evenly and develops a fantastic, springy texture. Bucatini is the undisputed, legendary staple of Roman cuisine. It is the pasta of choice for an authentic Bucatini all’Amatriciana (with guanciale, pecorino and tomato), but tastes just as sublime with a rich Cacio e Pepe or a creamy Carbonara, where the sauce clings to the outside whilst seeping into the hollow centre.

The base consists of 100% superior-quality durum wheat, which is grown entirely under our own management in the sun-drenched fields of the Campania hills (Km 0) and kneaded with pure spring water. As we are committed to a purely natural cultivation process, the grain is guaranteed to be 100% free from pesticides and glyphosate. This results in an exceptionally high natural protein content (17g per 100g) and a deep, full-bodied wheat flavour. Thanks to the authentic extrusion through bronze dies (trafilata al bronzo) and an extremely patient, slow drying process at a low temperature, the pasta retains its characteristic rough texture. This ensures maximum sauce absorption and an unrivalled al dente bite after a cooking time of 11 to 12 minutes.
