The base consists of 100% superior quality durum wheat, which is entirely cultivated under our own management in the sun-drenched fields of the hills of Campania (Km 0) and is kneaded with pure spring water. Because we swear by a purely natural cultivation process, the grain is guaranteed to be 100% free from pesticides and glyphosate. This results in an exceptionally high natural protein content and a deep, full grain flavour. Thanks to the authentic pressing by bronze moulds (bronze drawn) and an extremely patient, slow drying process at low temperature, the pasta retains its characteristic rough texture.
