Caccese Pennoni – Hand-rolled Italian pasta (500 g)

Caccese Pennoni are large, smooth pasta tubes with diagonally cut ends: the bigger brother of penne. Their generous size pairs well with hearty ragù, mushroom sauce, and Italian baked dishes.

Pastificio Caccese makes this pasta in Campania from durum wheat from its own agricultural enterprise. The bronze moulds give the pasta a slightly rough surface that holds sauce well. The Pennoni are therefore smooth in shape, without ridges, but have the characteristic texture of bronze-drawn pasta.

  • Durum wheat from its own cultivation: sourced from Caccese's agricultural enterprise in Campania.

  • Bronze-drawn: trafilata al bronzo, for a slightly rough surface that holds sauce.

  • Slowly dried at low temperature: according to the artisanal method of the producer.

  • Cooking time: 12 minutes; taste towards the end for the desired bite.

  • Contents: 500 g.

Pennoni for ragù and baked pasta

Do you want to buy large Italian pasta for a rich sauce? Pennoni, with their wide opening, accommodate sauce and smaller pieces of meat or vegetables. Combine them with a slowly braised beef ragù, a rich tomato sauce, or mushrooms.

Also for baked pasta these large pasta tubes are a tasty choice. Mix them with sauce, spread them in a baking dish and finish off with mozzarella or grated cheese.

What is the difference between Pennoni and Pennoni Rigati?

These Caccese Pennoni have a smooth exterior. Pennoni Rigati are the ridged variant. Both have the characteristic angled ends, but they are different versions with their own cooking times.

The secret of Nonna Kelvini

Are you cooking the Pennoni further in the oven? If so, cook them for a few minutes shorter than the indicated cooking time. Use enough sauce so that the pasta can continue to cook in the oven without drying out.

Are you serving them immediately? Briefly mix the cooked Pennoni with the warm sauce and add a splash of pasta water if necessary. This way, the sauce distributes nicely over and into the pasta.
