The base consists of 100% superior quality durum wheat, which is entirely cultivated under our own management in the sun-drenched fields of the hills of Campania (Km 0) and is kneaded with pure spring water. Because we swear by a purely natural cultivation process, the grain is guaranteed to be 100% free from pesticides and glyphosate. This results in an exceptionally high natural protein content and a deep, full grain flavour. Thanks to the authentic pressing by bronze moulds (bronze drawn) and an extremely patient, slow drying process at low temperature, the pasta retains its characteristic rough texture. This ensures maximum sauce absorption and an unparalleled al dente bite after a cooking time of 11 minutes.
