The base consists of 100% superior-quality durum wheat, grown entirely under our own management on the sun-drenched family-owned fields in the hills of Campania (Km 0) and kneaded with pure spring water. As we are committed to a purely natural cultivation method, the grain is guaranteed to be 100% free from pesticides and glyphosate. This results in an exceptionally high natural protein content and a deep, full-bodied grain flavour. Thanks to the authentic pressing through bronze dies (trafilata al bronzo) and an extremely patient, slow drying process at a low temperature, the pasta retains its characteristic rough texture. This ensures maximum sauce absorption and an unrivalled al dente bite after a cooking time of 11 minutes.
