Mezze Maniche Rigate (literally: 'half sleeves with ridges') is a fantastic, medium-length and hollow type of pasta that is hugely popular in Central and Southern Italy. The spacious, hollow interior generously accommodates richly filled sauces, while the deep ridges on the outside act like a magnet for sauce adherence.
