A centuries-old tradition that lives on today. The name Caciocavallo is one of Italy’s oldest cheese traditions.
For centuries, the cheeses have been hung in pairs from wooden rods to mature. This distinctive maturing method gave the cheese its name: cacio a cavallo, literally ‘cheese on horseback’. Whilst many traditional products have disappeared in the world of mass production, the Iacocca family remains faithful to the artisanal methods passed down from generation to generation. The result is a cheese that tastes not only of milk and maturation, but also of history.

In San Marco dei Cavoti, a small village in the province of Benevento, life still follows the rhythm of the seasons.
