A hidden treasure from the forests of Avellino

It is still dew-fresh as the truffle hunters with their dogs venture into the forests around Avellino in Campania. The earth is rich and dark, and the air is pregnant with the scent of hazelnut and woods. It is here, in this hidden oasis, that the rare black summer truffle is found.

At Kelvini Italian Artisan, we believe this is a sacred moment. That’s why we capture that pure magic for you. We process the truffle immediately after harvest, along with our artisanal, bronze-cast tagliatelle and cold-pressed extra virgin olive oil. No additives, no frills. This is the soul of Italian cuisine, coming to life in your home in just 15 minutes.

🛒 What do you need? (Ingredients)

• 400g Artisan Tagliatelle

• 40g Summer Truffle Carpaccio

• 4 tbsp Cold-Pressed Olive Oil

• 1 clove of garlic

• Salt & fresh black pepper

👨‍🍳 The Preparation (Step-by-step)

Step 1: The Pasta

Bring a large pot of generously salted water to the boil. Cook the tagliatelle for about 9 minutes until al dente.

Step 2: The Flavour Base

Heat the olive oil over low heat in a large frying pan or wok. Add the whole, crushed garlic clove and let the oil gently infuse. Remove the garlic as soon as it starts to colour.

Step 3: Mantecare

Add the drained pasta directly to the pan with the flavourful oil. Add a splash of the cooking water (about 1-2 ladles). Grate 3/4 of the truffle carpaccio finely over the pan and mix everything well (this process is called mantecare). Let the pasta cook for another minute over low heat in the sauce until it is perfectly bound.

💡 The "Farmer's Secret" Tip

never cook the truffle over high heat! Truffle is scared of extreme heat and immediately loses its complex, volatile aromas.

Tip from the farmer: remove the pan from the heat when you mix the pasta (mantecare) and only add the truffle at the very last moment, so that the gentle residual heat releases the aroma perfectly.
