What does 'Monovarietale' mean exactly and why is it more exclusive?

Most olive oils in the supermarket are ‘blends’: a mixture of different olive varieties from various regions (or even different countries) to achieve a consistent, mild flavour. An Olio Monovarietale is made from 100 per cent of a single specific olive variety from a single specific region. It can be compared to a single malt whisky or a cru wine. You can taste the unique character, the soil (terroir) and the specific climate of the Ravece olive in its purest form. The risk for the farmer is much greater, but the gastronomic expression is undeniably superior.

Why do I feel a slight tickle or pepper in my throat with this oil?

That is actually the greatest compliment you can give this oil! That slight, spicy tingle in the throat is caused by the high concentration of polyphenols (powerful antioxidants). High-quality Ravece olives are harvested early in the season when they are still green and vital. This yields less oil per olive, but results in a flavour explosion and an exceptionally healthy oil.
