This premium pasta is made from 100% durum wheat of the very highest quality, grown entirely under our own management in the sun-drenched fields of the Campania hills (Km 0) and kneaded with pure spring water. As we are committed to a purely natural growing process, the grain is guaranteed to be 100% free from pesticides and glyphosate. This results in an exceptionally high natural protein content and a deep, full-bodied grain flavour. Thanks to the authentic pressing through bronze dies (trafilata al bronzo) and an extremely patient, slow drying process at a low temperature, the pasta retains its characteristic matt and rough texture. This ensures maximum sauce absorption and an unrivalled, silky-smooth al dente bite after a cooking time of 8 to 9 minutes.
