Perciati (derived from the Neapolitan word ‘perciato’, meaning ‘pierced’) is a distinctive type of pasta from the culinary heart of southern Italy. Its elongated shape resembles thick spaghetti, but it is distinguished by a unique hollow tube structure running the entire length. As a result, the sauce not only coats the outside but also seeps deep into the centre. Ideal for iconic, robust sauces such as Amatriciana, a spicy Arrabbiata or a slow-cooked Neapolitan ragù.*
