Chestnut honey: The dark, untamed secret of the Italian chestnut forests

Chestnut honey (Miele di Castagno) holds a very special place in Italian beekeeping. Because chestnut honey is rich in tannins and has a higher mineral content than light blossom honey, it hardly crystallises at all and retains its liquid, syrupy texture. Its flavour profile is characterised by a full-bodied, malty opening and a distinctive, pleasant bitterness with notes of cocoa and wood in the finish. Due to its lower perceived sweetness, this honey is not simply sweet, but a multi-layered flavour enhancer that holds its own superbly alongside even the most robust ingredients.

Culinary Advice & Cooking Methods

  • Cold or Lukewarm Processing: Heating above 40°C damages the enzymes and the characteristic, complex flavour compounds.

  • Gourmet Glaze: Mix the chestnut honey whilst cold with a little balsamic vinegar, olive oil or herbs to glaze meat dishes just before serving.
