An age-old preservation method that became a delicacy Long before modern refrigeration techniques existed, Italian farmers discovered that wood ash provided excellent natural protection during the maturing of cheese. The ash kept excess moisture at bay, protected the rind and allowed the cheese to develop slowly. What was once a practical solution evolved into a much-loved maturing technique that is now practised only by true artisans. The ash not only influences the cheese’s appearance but also contributes to its complex aromas and characteristic texture.
