What is the difference between Tuber brumale and Tuber melanosporum?

Both are winter truffles, but the Tuber brumale has a slightly less dominant aroma than the Tuber melanosporum (Périgord). Visually, the Brumale is distinguished by its larger, whiter veins and slightly lighter brown interior. Culinarily, the Brumale is fantastic because it offers that true, deep winter truffle experience, but is often much friendlier on the wallet.

Can I process this truffle warm?

Yes! Unlike white truffles, black winter truffles like the Tuber brumale can tolerate gentle heat. It is delightful to stir it into a warm pasta or risotto at the very last moment, or to warm it subtly in a rich sauce. The heat helps to optimally activate the volatile aromas of hazelnut and moss.
