The name Tortiglioni originates from the Latin torquere ('to twist') and refers to the spiral pattern on a lathe. While classic pasta Rigatoni has straight, vertical stripes, Tortiglioni is characterised by slanted, swirling grooves around the cylinder. 

Made from 100% home-grown durum wheat and slowly dried for hours at low temperatures, this pasta retains its pure, nutty wheat flavour. The traditional process of pressing through bronze moulds (trafilata al bronzo) gives the outer wall a matte, rough surface to which cheese, meat, and tomato emulsions cling directly.
