The authentic artisanal soup pasta from the Southern Italian tradition of Pastificio Russo di Cicciano (since 1880). Chicory Seeds is a classic pasta shape (small pasta / soup pasta) made from durum wheat semolina, shaped like the fine seeds of chicory. This small pasta is specially made for light soups, clear broths, minestrone, and traditional Italian pasta dishes for children.

Made from 100% Italian durum wheat for a perfect al dente bite, excellent cooking stability, and a delightful absorption of broth.

Since 1880, the traditional brand Russo di Cicciano from the province of Naples is known for artisan processing of the finest Italian durum wheat into high-quality pasta varieties. The Chicory Seeds is one of the most beloved classic shapes from the Campanian pasta tradition.

Thanks to the careful drying at controlled temperature, this soup pasta retains all its nutritional values and the authentic taste of pure wheat.

Culinary Use & Preparation

  • Minestrone & Vegetable Soup: Add the Semi di Cicoria in the last minutes of cooking time to a rich vegetable soup.

  • Chicken or Beef Broth: Ideal as a filling for a clear, strong broth (pasta in brodo).

  • Children's Menus & Pastina: Forms a soft and light meal for the little ones in combination with a drizzle of extra virgin olive oil and grated Parmigiano Reggiano.

  • Preparation: Cook in plenty of boiling salted water for 5 to 7 minutes.
