Mafalde (also known as Mafaldine or Reginette, meaning ‘little queens’) is a visually striking, long pasta shape with a regal history.
The pasta was designed in the early 1900s to mark the birth of Princess Mafalda of Savoy. The design perfectly reflects this noble heritage: a wide, flat ribbon-shaped pasta with beautiful, wavy lace-like edges on either side. This unique shape creates a fascinating contrast on the palate; the smooth centre remains deliciously firm and al dente, whilst the curled edges soften and act as a real magnet for sauces. Mafalde is the ultimate choice for rich, creamy sauces, refined seafood sauces or an authentic, slowly simmering game ragù.
The base consists of 100% superior-quality durum wheat, which is grown entirely under our own management in the sun-drenched fields of the Campania hills (Km 0) and kneaded with pure spring water. As we are committed to purely natural cultivation, the grain is guaranteed to be 100% free from pesticides and glyphosate. This results in an exceptionally high natural protein content and a deep, full-bodied grain flavour. Thanks to the authentic extrusion through bronze dies (trafilata al bronzo) and an extremely patient, slow drying process at a low temperature, the pasta retains its characteristic rough texture. This ensures optimal sauce adhesion and an unrivalled al dente bite after a cooking time of 11 minutes.
