Under the flag of Kelvini Italian Artisan we bring the pure, artisanal food culture of Southern Italy directly to your kitchen table. Linguine owes its name to the Italian word for 'little tongues' (lingue). While regular spaghetti is round and tagliatelle is wide and flat, Linguine is positioned exactly in the magical middle: a narrow, elegant ribbon with a very slightly rounded core.

The combination of length and a larger adhesion surface makes this pasta unique. Thanks to the traditional process of pressing through bronze moulds (trafilata al bronzo) a matte, rough and porous exterior is created. This allows salty sauces, fine olive oils and creamy emulsions to cling not just to slide off, but to completely envelop the ribbon for an unprecedented taste sensation.

The Art of Shape: Why Linguine Shines in Simplicity

The thoughtful ribbon-shaped profile of Linguine offers specific culinary advantages in the kitchen:

      • The Flat Sauce Guide: Due to the larger surface area compared to spaghetti, sauces adhere significantly better to the strands.

      • Perfect Elasticity: The unique profile gives the pasta fantastic resilience. When twirled around your fork, it creates that characteristic, firm al dente bite.

      • Porous Bronze-drawn: The rough, chalky structure ensures that even the lightest extra virgin olive oil clings rock solid.

For Which Dishes Do You Use Linguine?

Linguine has traditionally been the undisputed favourite for coastal dishes and refined emulsions:

  • Linguine alle Vongole: The ultimate classic with chopped garlic, red pepper, white wine and fresh clams. The briny emulsion clings perfectly to the ribbon.

  • Pesto alla Genovese: The flat shape provides the ideal landing strip for the rich texture of basil pesto, pine nuts and pecorino.

  • Frutti di Mare: From scampi to calamari; the firm strands provide a delightful counterpoint to the rich structures from the sea.

  • Lemon, Garlic & Burrata: A fresh combination of organic lemon zest, extra virgin olive oil and creamy burrata.
