The Law of Al Dente Pasta

Why bronze-drawn molds determine everything.

When you find yourself in an Italian mum’s kitchen, there are few written rules. Cooking is done by instinct, by smell and by remembering how Grandma used to do it. But there is one sacred rule that is absolutely non-negotiable. A rule that marks the line between a culinary masterpiece and a culinary disappointment: the rule of al dente.

In the Low Countries, we have unfortunately grown up for decades eating overcooked, slimy strands that lie lifelessly on the plate. What a shame. Because real pasta should have soul. It should have a bite to it, show character and blend perfectly with the sauce.

However, the secret behind that perfect al dente texture does not begin in the saucepan. It begins much earlier: in the workshop of the artisan pasta maker, where molten bronze sets the tone.

The Big Secret: Trafilata al Bronzo (Bronze Moulds)

When you walk past the pasta aisle in the supermarket, you’ll probably notice it straight away. Some packets of pasta contain bright yellow, shiny, almost plastic-looking strands. Others, often the more expensive ones, contain pasta that looks pale, dull and almost dusty.

It is in that pale, rough pasta that the magic of the craft lies. This is Trafilata al Bronzo pasta — pasta drawn through bronze dies.

In the production of pasta, the dough made from durum wheat (semolina or semola di grano duro) and water is forced through a die (a moulding disc) under high pressure to achieve the correct shape — whether that be spaghetti, rigatoni or fusilli.

  • The industrial method: Mass producers use moulds with a Teflon coating. Why? The pasta slides through them at lightning speed, the machines suffer hardly any wear and tear, and the pasta dries more quickly. The result is super-smooth, glossy pasta.

  • The artisanal method: Traditional pasta makers swear by solid bronze dies. As bronze is a natural, rough material, it offers resistance to the dough. As the pasta is pressed through the bronze die, microscopic cracks and ridges form on the surface.

The test: Feel the difference

Try running your thumb over a traditionally made penne. It feels rough, almost like fine sandpaper. That ‘dusty’ layer is actually pure wheat starch, sitting on the outside, waiting to fulfil its most important task: thickening your sauce.

Why Bronze Casting ‘Catches’ the Sauce

I’m sure you’ll recognise the scenario: you’ve made a delicious pasta sauce, you spoon it over the pasta on your plate, and by the time you dig in with your fork, there’s a watery pool of sauce at the bottom of your plate and the strands of pasta are bare again. A culinary cardinal sin.

This is where the bronze mould demonstrates its absolute superpower. Thanks to the rough, porous texture of bronze-cast pasta, the surface acts like a sponge.

The sauce doesn’t slide off, but clings to the pasta. Every groove, every crease traps the olive oil, the pecorino and the rich tomato passata. The pasta and sauce become one seamless whole.

What’s more, the starch that is released from that rough outer layer during cooking creates a magical effect. When you stir a ladleful of that cloudy cooking water (acqua di cottura) into your sauce, the starch molecules bind the fats and the liquid. The result? A silky-smooth, creamy sauce without a single drop of cream having been used.

Al Dente’s Law: Science and Emotion

Al dente literally means ‘to the tooth’. It means that the pasta is cooked, but still has a firm bite at the centre. This is not a matter of taste; it is a matter of respect for the ingredients.

When pasta is cooked to perfection – al dente – the structure of the gluten remains intact. This has two major advantages:

  1. The Texture: The pasta retains its elasticity and springiness in the mouth. It’s satisfying to chew.

  2. Health: Al dente pasta has a lower glycaemic index than overcooked pasta. Your body has to work harder to break down the complex carbohydrates. As a result, your blood sugar levels rise more slowly, you feel fuller for longer and you avoid the well-known ‘after-dinner dip’.

Frequently Asked Questions about Cooking Pasta (FAQ)

Should you add olive oil to the cooking water to prevent sticking?

No, absolutely not! This is a persistent myth. Olive oil floats on water and forms a greasy film around the pasta as soon as you drain it. This actually prevents the sauce from clinging to the pasta afterwards. All you need to prevent the pasta from sticking is a large pan with plenty of water and a bit of stirring now and then.

How much salt should you put in the pasta water?

The Italians always say: the cooking water should taste of the sea (gusto di mare). As a rule of thumb, use 10 grams of salt per 100 grams of pasta and 1 litre of water. Only add the salt once the water is boiling vigorously, just before you add the pasta to the pan.

Why is slow drying so important?

Industrial pasta is dried rapidly at extremely high temperatures (up to 100°C) in just a few hours to boost production. This causes the sugars in the wheat to ‘burn’ and weakens the gluten protein structure. Artisanal pasta is dried at low temperatures (below 45°C). This takes days, but it ensures that the natural flavour, the golden-yellow colour and the nutrients are perfectly preserved.
